From in-universe context, what reasons would Hammond have for choosing female dinosaurs for Jurassic Park, rather than the more colorful males?

I think it's possible that the males could have been more territorial/less tolerant of other males than females would be. Of course that's not always the case (as with the triceratops).

Except we know little about the behavioral patterns of Triceratops in the JP universe. With the mindset of male Trikes being bigger with the larger horn and frill (Torosaurus is it's own dinosaur since the Torosaurus=Full Grown Male Triceratops isn't accepted.) still being in place, for all we know, the males could still be more aggressive then the females.

Because every embryo starts out female, it would take more time and money to have all the dinosaurs be male.

This. Dr Wu explains it in Jurassic Park when Malcolm asks how they know that all dinosaurs on the island are female.

They kinda sorta were male at some point. Grant realized this after coming across the Raptor eggs and pointed out that they could change sex in a single sex environment due to the frog DNA.

I get the technical reasons for it, but seeing as how most of the female dinosaurs are a rather dull brown color (except for the Parasaurs and Triceratops), and the males are more visually striking (T. rex, Brachiosaurs, Velociraptors) it would make sense from a marketing point of view that having more colorful dinosaurs would be more visually appealing to guests.

At least with Jurassic World, they allowed the dinosaurs to breed, and kept a tight eye on populations.

Because they wouldn't know unless they tried it, and they never had any intentions of trying it.
